According to Dr. Alberto Ascherio, Professor of Epidemiology and Nutrition at Harvard School of Public Health, it is very important to understand the impact of food consumption on ALS during its developmental stage. Dr. Ascherio’s study examines the role of dietary antioxidants in preventing ALS.

To make the long story short, the team found that increased consumption of carotenoids was linked to reduced risk of ALS. Furthermore, the study also pointed out that individuals who consumed more carotenoids were more likely to exercise and have higher vitamin C consumption. Dr. Ascherio’s conclusion? Carotenoid-rich foods may help prevent or delay the onset of ALS.
