Soluble Fiber – soluble fiber dissolves in water. When eaten, soluble fiber dissolves in the body and slows down the absorption of fat and sugar, and the breakdown of carbohydrates. Note that it doesn’t prevent the absorption; it only slows down the process. This is very helpful for those seeking to have a stable blood sugar levels.

According to Dr. Alberto Ascherio, Professor of Epidemiology and Nutrition at Harvard School of Public Health, it is very important to understand the impact of food consumption on ALS during its developmental stage. Dr. Ascherio’s study examines the role of dietary antioxidants in preventing ALS.

To make the long story short, the team found that increased consumption of carotenoids was linked to reduced risk of ALS. Furthermore, the study also pointed out that individuals who consumed more carotenoids were more likely to exercise and have higher vitamin C consumption. Dr. Ascherio’s conclusion? Carotenoid-rich foods may help prevent or delay the onset of ALS.
